Local restaurants do good business in the days leading up to Thanksgiving as people focus their cooking efforts on their big meals. After Thanksgiving, you have a lot of leftovers to get through, and you return to your favorite restaurants when you get tired of eating them. However, many of us get tired of leftover turkey long before it runs out. The trick to keeping your Thanksgiving leftovers interesting is to find new recipes for your turkey.
Use up your Thanksgiving leftovers with this Asian-inspired turkey stir-fry recipe.
Turkey Stir-Fry
Ingredients
The sauce:
- ¼ cup light soy sauce
- 1 tablespoon rice vinegar
- 2 tablespoons cornstarch
- ½ teaspoon red pepper flakes
The stir-fry:
- 1 pound turkey meat, cut into strips
- One package (1 pound) frozen stir-fry vegetables
- 1 tablespoon extra-virgin olive oil or avocado oil
- 1 tablespoon each minced garlic and minced ginger root
The garnish:
- 1 tablespoon sesame oil
- ¼ cup sliced scallions
Instructions
Whisk all the sauce ingredients together in a small bowl and set aside. Heat the olive oil or avocado oil in a large, deep skillet over medium-high heat for about two minutes. Put the frozen vegetables, garlic, and ginger in the skillet. Stir often as they cook until the veggies are defrosted and tender. Next, reduce the heat to medium and add the turkey and sauce to the skillet. (Give the sauce a quick stir before you put it in if the ingredients have separated.) Continue to stir everything in the skillet until the sauce thickens and the turkey and veggies are completely coated. Because the turkey is already cooked, it should only take a few minutes.
Transfer the stir-fry to a serving dish, garnish with sesame oil and scallions, and serve. You can also serve it over Asian noodles or rice. However you choose to serve it, you’ve just turned your Thanksgiving leftovers into an Asian food feast!
