The Crispy History of Tempura

Tempura, with its light and crispy exterior, has become a beloved dish worldwide. Originating in Japan, this delectable culinary creation has a fascinating history that stretches back centuries. In honor of National Tempura Day, which passed on January 7th, one of your favorite Nashua restaurants, San Francisco Kitchen, is taking the time to celebrate one of our favorite foods with some history!

Ancient Roots

The roots of tempura can be traced back to the 16th century when Portuguese missionaries and traders introduced the concept of deep-frying to Japan. The Portuguese had a dish called “peixinhos da horta,” which consisted of vegetables dipped in batter and fried. Japanese cooks adapted this technique to their own culinary traditions.

The Birth of Tempura

The term “tempura” is believed to have originated from the Latin word “tempora,” meaning “times” or “Ember Days.” These were religious observances that involved abstaining from meat and consuming vegetables and fish. The Japanese, during the Edo period, adopted this practice and began deep-frying vegetables and seafood in a light batter.

Evolution in Japan

Tempura gained popularity in Japan as street food during the Edo period (1603-1868). It was often sold by yatai (food stalls) and became a favorite among commoners and samurai. The simplicity of the batter, typically made with flour, water, and eggs, allowed the natural flavors of the ingredients to shine through.

Tempura in Modern Times

Tempura continued to evolve, and by the Meiji era (1868-1912), it had become a staple in Japanese cuisine. It found its way into high-end restaurants, where chefs refined the art of tempura preparation. Today, tempura is enjoyed in various forms, from the classic shrimp and vegetable tempura to innovative creations featuring unique ingredients!
